The wine cellar is equipped with the most technologically advanced equipment in order to get the most from the raw materials and in order to maintain maximum control over every phase of production, from fermentation to bottling.
The processes include the delicate stripping of the stem in order to avoid damaging it, modular crushing, gentle pressing with a pneumatic press, which is essential for the high quality white wines, maximum care in the handing of the product (grapes-must-wine) with the use of peristaltic pumps and automatic temperature control during fermentation for each individual tank in order to preserve the grapes’ natural flavours and aromas.
The winemaking containers are all made from stainless steel, while a number of those used for aging and storage are made from vitrified cement.
For wines that require wood aging, barrels and casks made from French oak are used, selecting the woods and the roasting processes which are best suited to the individual wines.
We also have a highly efficient bottling and packaging line that allows us to operate at the highest quality levels, as well as to reduce, amongst other things, the amounts of sulphur dioxide used for preservation.
The bottled wine is stored in a warehouse with controlled temperature and humidity in order to maintain the organoleptic characteristics of our products at their best.
