- Sparkling wine vinification according to the Charmat method: the sparkling wine vinification process is completed directly by the must in an autoclave at constantly monitored temperature , where the selected yeasts create an optimal fermentation. Once the fermentation -approximately 120 days - has been completed, the product is immediately filtered in order to preserve its natural freshness .
The Final bottling stage is carried out after the product has been left to age for several weeks in an autoclave . The wine continues a short ageing in the bottle.

Emotional and sensorial charateristics
This sparkling wine is entirely produced with Moscato grapes, and it has a very low level of sugar that makes it very similar to a semi-sweet wine. It has a nice intensity and a persistent flavor, with sage, honey, orange flowers, tropical fruit and nutmeg hints.
It is very fresh to the palate and it has a soft, floral, intense, pleasant and persistent taste, and a very fine and elegant perlage.
Better to be served at 8 – 10 °C.
It is excellent if matched with buttery aromatic cakes with raised dough, such as panettone from Milan, pandoro from Verona or the Easter Colomba, or sponge-cakes or semifreddos with white or yellow fruit, cream and sultana grapes, zabaione, tiramisu, panna cotta, must cookies with raisins. Very nice to be tried with aged cheese, matched with jam or honey.
